La Serenissima is a winery in Warner Springs, CA. The winery is named after The Republic of Venice, Italy, where the tradition of wine making flourished for centuries.
The 25-acre vineyard rests on a gentle slope facing the ocean. The grapes are not grown with fertilizers, but in a soil rich in nutrients and minerals from erosive runoff and volcanic deposits from the nearby mountains.
The winery grows and produces six varietals: Cabernet Sauvignon, Cabernet Franc, Tempranillo, Merlot, Arneis, and Syrah.
The grapes are harvested and destemmed by hand and fermented in oak. Wine is aged for two to three years in American and French oak barrels. Once bottled, the wine is stored for at least one more year for maturity.
